Summer Salad

When it is hot outside, there is nothing better than a fresh cool summer salad.


There are many benefits of a salad and eating raw fruits and vegetables daily.


  • They are a great source of fiber which helps you feel full so that you won’t overeat the rest of the meal.

  • You can use different oils and seeds to add healthy fats to your diet.

  • Using spinach as lettuce helps protect your heart and improve your skin.

  • And it is a great way to add herbs and other nutritional raw foods to your diet.


It is fun to use fresh ingredients from your local farmer's market during the summer.


Here is a recipe using peaches and fresh tomatoes. It also uses mozzarella cheese, which is not from the farmer's market. LOL!


TIP: When fresh peaches are cut open and exposed to air, they can start to brown. However, dipping the peach slices into lemon juice from a fresh lemon diluted in water will prevent browning.


This recipe takes about 15 min to make and serves 2.


Peachy Caprese Salad


Ingredients

4oz mozzarella cheese

2 cups leaf lettuce

1 medium peach, cut into wedges

1 large heirloom tomato, cut into wedges

½ cup loosely packed basil leaves

2 Tablespoons extra virgin olive oil

1 Tablespoon balsamic vinegar

½ teaspoon flaky sea salt

⅛ teaspoon coarsely ground pepper


Directions


Tear the mozzarella into large pieces.

Mix olive oil, balsamic vinegar, salt, and pepper in a bowl.

In a large bowl of lettuce, arrange peach wedges, tomato wedges, mozzarella, and basil around the lettuce.

Drizzle with the olive oil, vinegar, salt, and pepper mixture.
