The other day I made homemade spaghetti, crockpot vegetable lasagne, sourdough bread, and an Italian Salad for a big family gathering.
Everybody loved all of the food, but I got so many compliments on the salad. There were so many great vegetables that gave the salad so much flavor. The dressing was so good and flavorful too!
I love homemade salad dressings. Store-bought dressings can have many preservatives, and they don’t always use the best ingredients. For example, many dressings use canola or vegetable oil which can cause inflammation in your gut.
And homemade dressings are so easy to make!
So here is my Simple Italian Salad and Dressing recipe so you can make it when you cook Italian food or whenever you want a really good salad.
1 head leafy romaine lettuce or 2 romaine hearts, roughly chopped
1/2 medium red onion, thinly sliced
1/2 cup grated parmesan cheese
1 cup pepperoncini, whole or sliced
1/2 cup black olives, sliced or whole
1-pint cherry tomatoes
freshly ground pepper, to taste
croutons, store-bought or homemade
Italian Dressing Ingredients
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried basil
1/2 tsp sea salt
1/2 cup extra virgin olive oil
2 tbsp red wine vinegar
2 tbsp mayonnaise (optional)
For the dressing:
Place all of the dressing ingredients in a jar with a tight-fitting lid. Shake vigorously until all ingredients are combined. Store in the refrigerator for up to a week. Shake before each use.
For the salad:
Place all of the salad ingredients in a large salad bowl. Drizzle with Italian dressing and toss to combine.
